Marmalade Loaf


I tried making this last week and it was so good that we have savored every little piece over tea in the evenings when it has turned cool. I don't even like marmalade, but this is just amazing! You have to try it. Moist, and orangy, it reminds me of my Grandma's famous sweet orange rolls. It freezes really well, too.

1/4 cup softened butter
3/4 cup sugar
2 eggs
1/2 cup chopped walnuts (although I left these out and it was delicious)
1/2 cup orange marmalade
2 1/2 cups flour
1 Tbsp baking powder
1/2 tsp salt
2/3 cup orange juice

Cream together the butter and the sugar, adding the eggs one at a time and mixing well. Add marmalade and walnuts and mix well. In a separate bowl whisk together the flour, baking powder and salt. Add to the butter mixture, alternating with orange juice-3 additions of flour mixture, 2 additions of juice. Grease an 8x4 inch loaf pan and spoon batter into it.

Bake at 350 for about 60-70 minutes. If it begins to brown too much, cover the top with some foil. In the meantime, mix together the glaze ingredients.

Orange glaze:
1/4 cup icing sugar
1 Tbsp orange rind
2 Tbsp orange juice

When the loaf comes out of the oven, poke about 15 holes in it with a skewer and slowly drizzle glaze over top, letting glaze soak into the loaf. Let sit for about 30 minutes before you remove it from the loaf pan. Enjoy!

Makes 1 Loaf, about 12 slices.

Mmmm... marmalade. Husband would LOOOOVE if I made him marmalade. Maybe I'll keep this recipe in my pocket, as a bribe, or weapon...

Watch the baking time, last time I made it the loaf was a bit dry. You may want to make it a bit shorter? Either that or I forgot something, lolololol!
